Why Tallow Produces the Best Chicken Sear

Beef tallow has a smoke point of approximately 420F and is predominantly saturated fat, which means it remains chemically stable at searing temperature without oxidising. When you sear chicken skin in tallow, the fat reaches the temperature required for rapid Maillard reaction — the browning that creates crust flavour — without breaking down into the harmful aldehydes that canola and vegetable oil produce at the same temperature. According to the Weston A. Price Foundation, grass-fed beef tallow contains conjugated linoleic acid and fat-soluble vitamins A, D, E and K2. Research on PubMed confirms tallow's stability at high cooking temperatures versus the oxidative instability of polyunsaturated seed oils.

Lemon Tallow Chicken Thighs — The Recipe

Serves 4 | Prep 10 minutes | Cook 30 minutes Ingredients: 8 bone-in skin-on chicken thighs · 2 tablespoons beef tallow · Zest of 2 lemons · Juice of 1 lemon · 4 cloves garlic crushed · 4 sprigs fresh thyme · 1 teaspoon salt · Half teaspoon black pepper · Fresh parsley to finish Step 1: Pat thighs completely dry. Season with salt, pepper and lemon zest on both sides — press the zest into the skin. Step 2: Heat tallow in a large oven-safe pan over high heat until smoking. Lay thighs skin-side down. Do not move for 4 minutes until skin releases naturally. Step 3: Flip. Add crushed garlic and thyme around the chicken. Squeeze lemon juice directly over. Transfer to 200C oven. Step 4: Roast 22 to 25 minutes until skin is deeply golden and internal temperature reads 75C. Skin should shatter when tapped. Step 5: Rest 5 minutes in the pan.
